If you have been looking at some of the wonderful fall décor shared on so many blogs, you will see this symbol of the fall harvest season….. those beautiful ears of corn with multicolored kernels that adorn doors, compliment centerpieces and accent fall décor.

Indian corn is one of the oldest varieties of corn, a type that Native Americans taught the early colonists how to cultivate.

And our ancestors didn’t decorate with it — they ate it. Even though this corn has a hard outer shell, this type of corn can be consumed by livestock and humans, and is used in such dishes as hominy and polenta.

One of my friends grew Indian corn this year and it is one of my favorite things this fall season.

This beautiful corn is fairly easy to grow — both the big ears and miniature 2- and 4-inch varieties. You can buy the seeds at most garden supply centers or order them online. When planting the corn, pay attention to the planting directions if you want solid colored ears. For the multi colored look, you can mix the seed colors and let the combinations surprise you.

If you’re using Indian corn for decorating, be sure to wait until the husks are no longer green to pick them, and once picked, let the ears dry for about a week. You can store them at room temperature for four to six months.

The corn is beautiful in its natural form but many people like to coat the corn with a lacquer to give it a shiny look.
